Lemon Rice [good in the winter months according to Ayurvedic living]
Ingredients:
Rice 2 cups (soaked overnight and cooked well) Lemon Juice 1 cup Black gram / Urad daal 2 tsp Channa daal 2 tsp Peanuts 1/2 cup Mustard seeds 1tsp Cumin seeds 1tsp Turmeric pdr 1/2 tsp Red chillies 2-3 Curry leaves 10 Coconut 1 cup Coriander leaves 1/4 cup salt to taste Sunflower Oil 2tbsp
Preparation: Place oil in the vessel and once it is heated add urad daal, channa daal, peanuts, mustard, cumin, turmeric, curry leaves, red chilli once this pops and is done, add the coconut and lemon juice and salt, cook it well for a few minutes and then add the rice and mix well with the rest of the ingredients and then in the end add coriander leaves and it's ready to eat!
